Strawberry Balsamic Pork and Baked Sweet Potatoes

This recipe uses either a pork roast, pork chops or pork loin – so it’s pretty versatile.

Plus a great tip for “baking” sweet potatoes right on top of the pork – makes it one pot meal.

If you don’t like sweet potatoes…you could always use Yukon Gold or Red potatoes.
